From Pemmican to Poutine: Eating in Canada

Pauline Morel, under the supervision of Nathalie Cooke, McGill University

In the 19th century, while each wave of immigration bring their own foods, pioneers and labourers must adapt their early kitchens to the landscape. In the 20th century, concern about nutrition assumes a central role and technological innovations would deeply transform the Canadian kitchen.
